My most loved was constantly cooked vegetables and this specific blend of simmered asparagus and mushrooms is a match made in paradise!

Asparagus and mushrooms are every vegetable that, independently, are pressed with so much flavor. Yet, when you join the two and include garlic in the blend, the flavor is perfect. The freshness of the asparagus supplements the natural mushrooms delightfully.

When broiled, open the stove and simply take a whiff. Dooo itttt. The smells that radiate the minute you remove the cooking skillet from the broiler is only an antecedent to the flavors that you are going to taste in your mouth. YUM!

Roasted Garlic Asparagus and Mushrooms #sidedish #vegetarian

Roasted garlic asparagus and mushrooms is the perfect vegan side dish. For a complete meal, serve this with chicken breast or salmon.

  • 1 bunch of asparagus
  • 5 large white mushrooms, sliced
  • 1 tablespoon olive oil
  • 1 clove of garlic, minced
  • salt and pepper to taste

  1. Preheat oven to 350 F.
  2. Wash and prepare the vegetables. Cut off woody ends of the asparagus and cut into 2 inch pieces. Add to a medium-sized roasting pan.
  3. Slice mushrooms and add to pan.
  4. Add garlic, salt and pepper. Drizzle olive oil and toss to coat.
  5. Roast for 35 minutes.
